The Brasserie Burgonde is located in VITTEAUX (21) in the heart of the Auxois region.
We have been brewing beer since 2000 (formerly Brasserie du Roy until 2003, then Association des Brasseurs Amateurs de l'Auxois from 2004 to 2007).
The Brewer-Founder : Nicolas BRETILLON has elaborated all the beer recipes with a great passion and a great respect for tradition, which earned him two prizes at the National Beer Competition of the French Brewery Museum in Saint Nicolas-de-Port (54):
Fourquet D'OR 2000 for his Blonde Beer.
Fourquet d'ARGENT 2006 for his White Beer.
The brewer masters all the manufacturing processes, including the selection of the raw materials necessary for the brewing (barley malts, wheat, oats, hops, yeast), the control of the fermentation, the ageing and the bottling.
The cereals and the malt are almost entirely produced by our farmer in Cessey lès Vitteaux. This approach is in line with our Auxois Naturellement charter.
In addition, we use up to 50% raw cereals during the brewing process, which allows us to significantly limit the energy footprint of our beer production.
All our beers are brewed in the traditional way with refermentation in the bottle according to an ancestral method.
Our beers are therefore live, unfiltered, unpasteurised and top fermented (20 to 25°C).
We offer a wide range of permanent beers as well as ephemeral and seasonal beers such as Christmas beer, Spring beer, ...
The town of VITTEAUX has an important brewing past, the THUBET brewery succeeded the DECAILLY brewery in 1900 and the MORITZ brewery also appeared in the Brewery Directory in 1910.
The abundance of water in the village enabled them to mechanise their installations thanks to motor power.
The water of VITTEAUX is favourable to brewing thanks to the minerals contained naturally.
